Leftover Roast Beef Tacos

    Ingredients

    PICO DE GALLO:

    • 5 diced tomatoes
    • 1/2 diced yellow onion
    • 1 minced jalapeno
    • 1/4 c. chopped cilantro
    • 1 T extra virgin olive oil
    • 2 T lemon juice
    • 1/2 tsp. kosher salt
    • Pepper to taste

    TACOS:

    • Corn Tortillas
    • 3 T. olive oil
    • 1 lb chopped Hahn’s Roast Beef, warmed
    • 1 c. chopped romaine
    • 1/2 c. shredded cheddar cheese

    Method

    1
    • In a bowl, combine tomatoes, onion, jalapeno, cilantro, olive oil, lemon juice, and salt and pepper.
    • Over medium heat, add a drizzle of olive oil to a pan. Toast tortillas in pan one at a time until golden on each side.
    • Layer tortillas with warm Hahn’s Roast Beef, lettuce, cheese, and the Pico de Gallo!
